Hi Jason,
I believe that your next step in moving on from grisaille to full color is through color temperature. Select warm and cool variants of the same color (warm grey and cool gray?) and see how much that adds. An interesting approach is to use raw umber for your initial lay in of the shadow areas, and develop those values. This is the imprimatura. After that has dried, use flake white or brilliant yellow extra pale for the lit areas. This is the velatura. Where they overlap, there will appear a wonderful blue, cooler than either the white or umber, which will be warm by comparison. The cool transition between warmer lights and shadows will give you some real roundness.

One of the best ways to learn good color sense is through doing accurate master studies. Doing a several Bouguereau, Sargent, and whoever else’s colors you admire will train the eye and intuition for skin tones.
